What to do with all that zucchini
September 18, 2008
When I returned from my Miami vacation, I hoped that my container garden would be overrun with zucchinis.
No such luck.
I had six nice-sized zucchinis, half of which were entirely or partially chewed up by slugs.
I was able to make Sautéed Zucchini with Tomato Sauce from the zucchinis I grew. It tasted great.
Harvesting the zucchinis reminded me of the times my family, friends, and coworkers had more than an abundant supply of the green, delicately-flavored, cylindrical beauties. I remember my dad saying one year that the zucchinis were getting as big firewood and soon we’d have enough for a cord of them.
