My garden is in near full production.
This year is a good year for zucchini. In fact, I’ll need help in a few days getting them eaten. It’s exciting. Some years, the zucchinis don’t produce.
There’s Swiss chard, kale, and collards.
Yet to come are carrots, green beans, and cucumbers.
I love gardening and eating organic vegetables from my yard.
However, I need some zucchini recipes. I’m going to look up a casserole with tomatoes, cheese, and zucchinis.
I guess I need to make chocolate-zucchini cake again. I don’t eat many desserts, and I usually make the delicious cake for company. However, due to the pandemic, my daughter and the kids aren’t coming this summer.
I did make a lot of chocolate-zucchini muffins for my friend Marj Yung a few years ago. I’ll have to look up the recipe.
